Canoe or Kayak? personal preference drives that one.  Some of our top 3 person teams finished the paddle section using a canoe with kayak paddles.  2 person kayaks are pretty fast as well, as long as the team practiced paddling together and the guy in the front doesn't suffer from brain damage...been there *@!&!!, it's not fun...
